Sweet Pea Spread

Always have dip or spread handy as you can turn it into a side dish, soup or snack. Cascade Farms has frozen peas. And this is a super easy and very festive looking dip.

  • 6 bulbs of garlic minced
  • 1/2 cup olive oil
  • 3 cups peas – blanched (can substitute edamame)
  • zest from one lemon
  • 3 teaspoons lemon juice
  • ½ cup mint leaves or cilantro or both
  • a few stalks of mint chopped and lemon zest for garnish
  • 1 teaspoon salt

Heat the olive oil in a skillet and add the garlic. Allow the garlic to cook for a minute or so until soft but not brown. Place the peas in a food processor , Add the heated oil to the peas. Add the lemon zest, lemon juice and mint.

Pulse until pureed with but not smooth. Add water if the consistency is too thick.

Sprinkle the chopped mint sprigs and lemon zest on top and serve . Will keep several days in the fridge.
